Middle Eastern...Round 2!


Up until about a month ago I didn't even know what a falafel was (assumed it was a flat waffle but I guess that would be a pancake...I digress) Now they are all the rage in the Lemire house hold. It turns out you can do more with falafel mix then just add water, form balls and fry them...you can put it on chicken and fry that too :) Dinner was inspired by one of our favorite food network cook books. (wish I could take credit for breading chicken in falafel mix but alas I can not). I really wasn't in the mood to cook last night but I compromised and made what Brea wanted (Thats how comprises work in your houses too, right guys?) In the end I am glad she talked me in to it because this one is great!

Chicken:
Vegetable Oil (Enough to fill a heavy skillet 1/2 inch)
1 Package Boneless Skinless Chicken Breast (I cut min length wise to make monster chicken fingers)
1 Package Falafel mix
Salt and Pepper

Preheat the oven to 400

Heat the oil (350-375) in a large skillet. Season the chicken with salt and pepper then dredge in the falafel mix, shake off any excess. Gently place the ckicken in the hot oil and fry on each side (2-3 mins). Work in batches if the pan isn't big enough. Transfer the fried chicken to a baking sheet with a wire rack on top of it. Once I'll the chicken is fried pop them in the oven for about 7 mins (until chicken is done, there is no such thing as med rare chicken ;)

We picked up a box of Mediterranean Couscous to go with it, just follow the box instructions

Cucumber Salad:
3 Cucumbers, chopped
1/2 Red onion, chopped
1/4 Dill, chopped
1/4 mint leaves, torn
1/2 Cup greek yogurt
Zest from 1 lemon
Juice of 1 lemon
salt and pepper to taste

Mix everything together and store in the fridge until your ready. The longer it sits the better it gets
