Split Pea soup..who knew its actually good


I first need to apologize for our long hiatus, we spent a week in Vegas celebrating my buddy's birthday. If I could remember any of it I would share the story but the "what happens in Vegas, stays in Vegas" cliche is true only because the booze flows like water out there. On our way back we stopped in the Califorina Pizza kitchen and to my surprise they have more then just great pizza. Sabrina ordered a split pea and barley soup...I made a face...I shouldn't have..it was great!

2 C split peas
6 C water
1 Quart chicken broth
1/2 onion, minced
2 cloves garlic, minced
2 teaspoons lemon juice
salt and pepper
1 teaspoon sugar
1/4 C fresh parsley
4 Sprigs of Tyme, chopped
1/2 cup barley
6 cups water
2 medium carrots, diced
1 celery stalk, diced

In a large pot add peas, chicken broth, water, onions, garlic, lemon juice, salt, pepper, parlsey, and time. Bring to a boil then simmer for 1 1/2 hours.

At the same time in a medium saucepan add barley and water, bring to a boil then simmer for 1 1/2 hours until the barley is soft.

With an immersion blender blend the pea mixture until smooth. Drain then add the barley. Season to taste with salt and pepper. Add carrots and celery and let simmer for 20 mins.
