The New Years healthy diet rages on...but it was time to add some red meat. We went with New York strip because it is somewhat more lean then ribeye and not nearly as expensive as filet. Brea has the broccolini pasta dish she likes so we married the two together (not sure if it is legal in our state but I am sure it is in MA ;) The pasta is dressed with a light viniagrette and tossed with fat free feta so the whole thing is pretty healthy (we it was until I basted the steak in butter bur shhh don't tell Brea)...crap she reads this too..don't worry honey it was only like a Tbsp...
2 New York Strip steaks
1 Tbsp Vegetable Oil
1 bunch Broccolini, stems chopped 2 inch pieces, tops cut in to florets
1 Shallot thinly sliced
1 Lbs Whole Wheat pasta, we used bow ties
Zest of 1 oranage
2 Tbsp Red wine vinegar
4 Tbsp Extra Virgin Olive Oil
Salt and Pepper
8 oz Fat Free Feta, crumbled
Soak the shallots in water for 10 mins.
Set the steaks out to get them to room temperature and season generously with salt and pepper.
Bring a large pot of water to boil. Salt the water and add the broccolini. Boil for two minutes then remove with a spider and plunge in a bowl of ice water (keeps them nice and bright green, stops the cooking). Bring the water back to a boil. Add the pasta and cook 7-10 mins until done. Drain the pasta.
Meanwhile in a small bowl combine the vinegar and orange zest. Slowly whisk in the olive oil (it shouldn't separate if you do this right) season to taste with salt and pepper.
In the original pot combine the pasta, shallots, broccolini, viniagrette, and feta.
For the steak, heat a skillet over high heat. When the pan is really hot add the veg oil. Add the steaks. (don't F with them) Cook 2 1/2 minutes on the first side and flip once...only once! Cook another 1 min. Add about 2 Tbsp of butter to the pan. As the butter melts tip the pan towards you and with a spoon baste the top of the steaks in the melted butter. after a total of 5 minutes i pulled mine out for a nice med-rare. Cook to your own desired doness.
Let steaks rest for 5 minutes. Serve pasta and top with steak slices...Enjoy!
