Christmas, Pan Fried Fish

This is one from the Sechevich household, unfortunately none of this kids seem to know what Grandma did to make the fish but they impressed upon me that it better be just as good...or else. So I rolled up my sleeves went to work and this is what came out. Pan Fried Tilapia, dredged in lemon juice, breaded with Panko, Garlic, and Parmesan cheese.

3 Lbs Tilapia
1/2 C Olive Oil for pan frying
1/4 Lemon Juice
1 C Panko Bread crumbs
3 Cloves of garlic, crushed and finely chopped
1/4 C Grated Parmesan Cheese
Salt and Pepper

Heat the pan over med-high and add the oil.

Mix the garlic, bread crumbs, cheese, and season with salt and pepper. Dredge the fish in the lemon juice then in the breading mixture.

Working in batches pan fry the fish, about 3-4 mins each side. Remove the fish from the oil and let drain on a paper towel lined plate. Season with salt.
