molten chocolate cakes, so good you'll want to dive into the ooey-gooey center



i'm drooling just thinking about how marvelous these little cakes were. ryan is a huge fan of anything chocolate and especially anything with and oozy chocolate center. so in order to keep my hubby happy i thought it was time to try out a molten chocolate cake recipe. these are incredibly rich and delish!! i'm ashamed to admit that we polished off the entire batch that very evening that we made them (the resulting pounds shall be referred to lovingly as "newlywed bliss" or "contentment").



5.5 oz unsalted butter
5 oz bittersweet chocolate
3 egg yolks
3 eggs
1.5 C powdered sugar plus some to sprinkle on top
1/2 C flour

Melt the chocolate and butter together. We do this by placing the chocolate and butter in a metal bowl placed on top of a pot of boiling water (an economical and dual purpose double boiler). Allow the mixture to cool slightly. In a mixer bowl, whisk together the yolks and eggs. Add the powered sugar to the mix. Then slowly whisk in the chocolate butter mixture. Finally, slowly mix in the flour. Grease four large ramekins and pour the mixture evenly into the ramekins.

These can be refrigerated until you are ready to bake them and eat them (in our case they barely hit the ramekins before they were baked and eaten, but i'm sure others have more restraint :D ). Bake in a 450 degree over for 7 to 8 minutes (or until the cake appears to have set on the top). Flip the cake out immediately onto the plate and sprinkle with powdered sugar. Dive in!
