You could do this on the grill and it would be fantastic but my grill is currently out of gas and i didn't feel like dragging the tank down to the store to get a new one. So pan sear it is!
I tired my first fish taco in Hawaii many moons ago. Much to my surprise they were delicious. Mahi Mahi would be my fish of choice but we really don't get any good looking Mahi in my area. Tilapia on the other hand is in abundance and always looks fresh. Since it was a busy night we just heated up a box of Spanish rice to go with it.
Fish:
1 pk Corn tortillas
1lbs Tilapia
1lbs Tilapia
Salt and Pepper
2 Tbls Extra Virgin Olive oil
Fresh Cilantro
Coleslaw:
1 Pk Pre shredded coleslaw mix
3/4 C Mayo
3 Tbls Apple Cider vinegar
2 Tbls Sugar
2 Tbls Celery Seed
1/2 Tsp Hot Sauce
For the coleslaw mix the mayo, vinegar, sugar, celery seed, and hot sauces together. Fold in the coleslaw mix and season with salt and pepper to taste.
Heat a large skillet over med-high heat. Add oil. Season the fish generously with salt and pepper. Add the fish to the pan (working in batches) about 4 minutes each side. (Fish should be flaky and solid white)
The tortillas are great heated up on the grill but if not you can wrap them in some tin foil and toss them in the oven at 300 for about 5 mins.
Assemble the tacos, tortilla, fish, coleslaw, cilantro.
