(Makes 4 burgers)
1 1/4 Lbs Ground Beef (80/20 is best)
2 Tbs Vegetable Oil
8 Strips Center Cut Bacon
1 Red Onion Thickly Sliced
4 Slices of Cheddar
Your Favorite Carolina BBQ Sauce (Ours is Sticky Fingers Carolina Sweet)
4 Hearty Rolls
Cole Slaw (Recipe follows)
kosher salt and fresh ground pepper
Heat your grill to high.
Slice 4 1/2 inch slices of red onion and remove the center rings. (This will later be used as a well to add the BBQ sauce) Brush with oil ans season with salt and pepper.(both sides)
Season the beef liberally with salt and pepper. Divide the beef in to 4 equal portions and form 4 patties. Brush each patty with oil and season each liberally with salt and pepper (both sides). Grab your bacon slices, onion, and cheddar and head to the grill!
Lower the heat to med-high and place the burgers, bacon and onion slices on the grill. Close the lid, the burgers need about 4 minutes on each side (5 if you like them well done). The bacon only needs about 2 minutes on each side so after 2 minutes open the lid and flip the bacon, LEAVE THE BURGERS ALONE (I know you want to flip them and wack em with your spatula, don't!) After another 2 minutes open the lid and flip each burger once and ONCE ONLY (do not smash them down with the spatula like some deranged cave man that found a stick and fire to play with) Flip the onion slices using tongs and remove the bacon slices to the grill. Close the lid. After two minutes open the lid move the onion slices on top of each patty. Fill the onion well with BBQ sauce. Place two strips of bacon on top and then cover each with a slice (or two) of cheddar). Close the lid and let the cheese melt (1 - 2 mins).
Remove burgers from the grill and set aside to rest. Split the buns and brush with oil, place the buns on the grill and grill until just toasted.
Build the burger, Bun bottom, patty, coleslaw, bun top

Coleslaw:
1 Bag pre-shredded coleslaw mix
3/4 cup Mayo
1 small grated onion
3 Tbls Cider Vinegar
1 Tsp Celery Seed
A couple Dashes of Hot Sauce
kosher salt and fresh ground pepper
Combine Mayo, onion, vinegar, celery seed, and hot sauce in a bowl. Mix in coleslaw mix. Season to taste with salt and pepper. Let sit in the fridge so the flavors meld, the longer the better but if your like us and decide dinner at the last minute it will still be good.
