It turns out even without the beef and fat you can make some of the most addicting Chili dogs I have ever eaten.
For the "works" we did Spicy Mustard, Onions, Chili, Cheese and Broccoli Slaw...its a friggin party in your mouth!
Chili:
2 Tbls Olive Oil
1 Lbs 99% Fat Free ground turkey
1 Medium Sweet Onion, finely diced
1 Green Bell Pepper, finely diced
2 Chipotle peppers, minced
2 Cloves of garlic, minced
1 Beer (I used Heineken today but usually use Sam Adams Lager)
1 28oz can crushed tomatoes
1 6oz can tomato paste
1 Tbls Smoked Paprika
2 Tsp Chili powder
1 Tbls Cumin
Salt and Pepper to taste
I make my Chili in a monster skillet these days but you can certainly use a large pot. Bring the skilet or pot up to med-high heat and add 1 Tbls olive oil. Add the ground turkey and season with salt and pepper. Cook the meat while using a wooden spoon break it up. Add half the paprika and toss the turkey to evenly distribute. Once cooked through dump the meat on to a paper towel lined plate and return the pan to the heat. Add 1 Tbls olive oil then the onions and peppers. Season with salt and pepper. Cook down until the onios start to turn translucent. Add the garlic, cook for 2 mins. Add the chipotle and the turkey back in. Stir or toss. Raise the heat and add the beer. Bring to a boil then simmer down until almost all the beer evaporates. Add the crushed tomatoes, tomato paste, paprika, chili power, cumin, and salt and pepper. Stir together and let simmer for 10 mins. Taste and adjust seasoning accordingly.
Broccoli Slaw:
1 package pre made broccoli slaw mix (near the coleslaw mix)
1/4 C grated onion
1/2 C Mayo (we used light of course :D)
3 Tbls Apple Cider vinegar
1 1/2 Tsp celery seed
2 Tbls Sugar
Salt and Pepper to taste
Combine all ingredients in a bowl and taste. Adjust seasoning until you love it!
Chili Dogs:
1 package "all white meat" turkey dogs
1 package hot dog buns (we use pepperidge farm soft hoggie rolls, they are the best!)
1/2 Small onion chopped
Spicy Brown mustard
1 C shredded sharp cheddar
Boil the hot dogs to heat through. Start with the bun and add the spicy mustard (don't be shy). Next add the dog then the chopped onions. Top with chili, cheddar, then slaw.
Make sure your sitting when you take a bite cause once you do you may fall over as your eyes roll to the back of your head!
